Cheesy Chicken Casserole

2 cups cooked chicken (chopped)
1 onion (chopped)
1 can cream of chicken soup
¼ to ½ pound processed cheese or processed cheese spread (like Velvetta)
1 box stuffing mix
garlic powder (optional)
Place chicken and onion in a 9 x 13 casserole dish.
In a sauce pan, combine undiluted soup and processed cheese. Heat until mixture is smooth. Pour evenly over chicken and onion.
Prepare stuffing according to package directions. Spoon over mixture in pan. Sprinkle with garlic powder if desired. Bake uncovered 350 degrees until heated through and stuffing is nicely brown.
